Luis and Flor Leon started their journey in the 1980s, selling arepas at street fairs throughout New York City. Staying true to their Colombian roots, their original recipe featured traditional arepas stuffed with queso fresco. But a happy accident changed everything: a mistaken delivery of mozzarella inspired them to try something new. The result was a richer flavor and a gooier, more indulgent texture that customers loved. From that point on, MozzArepas was born—a playful twist on tradition that blended Colombian street food with Italian cheese. Today, their legacy lives on in Phoenix, Arizona, where their signature creations continue to win hearts.
